The Chicken Lady and New chickens
We purchased a chicken from “The Chicken Lady.”
We went to see this lady who breeds chickens. She calls it conservation breeding as there are many different types of chickens (over 300) and some of them are becoming quite rare as the poultry industry only cares about large breasted chickens who lay big white eggs (and some brown). She had a huge barn that clearly was a pig barn at some point in it’s life, but now housed over 200 chickens of many different breeds. Some of them were segregated to keep the breeding stock seperate and others were just running around in the filthy barn which had at least 1/2 a foot of droppings on the ground. Yum!
So we purchased three chickens from her (all young females) and asked if she would hatch some Mille Fleurs for us.

We’ve had the chickens home for a few days now and Sorcha is laying an egg a day. The interesting part of this is that it is green! It’s very stange to crack a green egg into the pan for the first time. Still delicious though!
